This rich sauce combines decadent black truffles with biodynamic full cream.
Few ingredients elicit a gourmet, cult-like response as strong as the magnificent truffle. There is a palpable excitement around the season in Sydney and as this approaches our founder Anna heads to her favourite NSW family truffle farm - Terra Preta outside Braidwood.
The pinnacle of regenerative farming is Rudolf Stiener’s Biodynamic agriculture program. Brothers Rob and Dan Watson, of Mungalli Creek Dairy, began this program when they took over the family farm in the 1980s. Their sensational Cream has been an essential ingredients at Pasta Emilia for over ten years.
Certified Organic Ingredients: Vegetable Broth, Cream, Wine, Mushroom, Black Truffle. Tapioca, Seasoning
Preparation Instructions: Stir through your favourite Pasta Emilia pasta shape. For an extra touch simply add anchovies, salty cheese or Pasta Emilia chilli oil on top.
