The magic trio of red pepper, zucchini, and eggplant adds complexity to this delicious tomato sauce.
The real star is the San Marzano Tomato (solanum lycopersicum), though. This amazing fruit heralds from Peru via a little village beneath the volcanic Mount Vesuvius, near Naples. Its rich flavours and large fleshy composition make the San Marzano most famous for sauce making.
Certified Organic Ingredients: Peppers, Zucchini, Eggplant, Onion, Tomato, Basil, Carrot, Parsley, Olive Oil, Salt.
Preparation Instructions: Bring to a gentle simmer and toss with your favourite Pasta Emilia pasta shape. For an extra touch simply add anchovies, salty cheese or Pasta Emilia chilli oil on top.
