Chittara
This lovely squiggly pasta is made using a tool called a chittara, a frame with a series of strings pulled taut across it, like a guitar. A sheet of pasta dough is placed across the strings and pushed through with a rolling pin to make long, thin strips.
We use Organic Durum Semolina (Titricum Durum) for this chittara.
Durum is a hard wheat which derives its gastronomically famous ‘al dente’ qualities from its high protein and gluten content. Grown around the world, the tricky semolina milling process makes it one of the only ingredients we have to import directly - ours comes from the Organic Molino Rosso Mill in Emilia.
Certified Organic Ingredients: Durum Semolina, Cake Flour, Organic Eggs, Filtered Water, Turmeric.
Preparation Instructions: Bring a large pot of salted water to the boil. Add pasta, gently stir with a wooden spoon and let simmer for about 4 minutes until al dente. Drain and toss it with your favourite sauce and serve.
