These wide ribbons of pasta are cut into short shapes. All the better for folding through robust, slow-simmered sauces such as duck ragu. Pappardelle is a pasta that you can really get stuck into.
We use Organic Durum Semolina (Titricum Durum) for this pappardelle.
Durum is a hard wheat which derives its gastronomically famous ‘al dente’ qualities from its high protein and gluten content. Grown around the world, the tricky semolina milling process makes it one of the only ingredients we have to import directly - ours comes from the Organic Molino Rosso Mill in Emilia.
Certified Organic Ingredients: Durum Semolina, Cake Flour, Organic Eggs, Filtered Water, Turmeric.
Preparation Instructions: Bring a large pot of salted water to the boil. Add pasta, gently stir with a wooden spoon and let simmer for about 4 minutes until al dente. Drain and toss it with your favourite sauce and serve.
