We use Organic Durum Semolina (Titricum Durum) for these lasagne sheets. Durum is a hard wheat which derives its gastronomically famous ‘al dente’ qualities from its high protein and gluten content. Grown around the world, the tricky semolina milling process makes it one of the only ingredients we have to import directly - ours comes from the Organic Molino Rosso Mill in Emilia.

Assemble lasagne sheets in alternating layers with beef ragu and creamy béchamel to make a traditional baked lasagne or focus on sauces that feature one seasonal vegetable, such as artichoke or fennel, for something more delicate.
