Finding the right vegetable varietal for our pasta is essential. The pumpkin that suits this pasta is the Berrettina Piacentina from Greg and Michelle at Block 11 Organic Farms who go out of their way to find the seeds and grow them to perfection.
This pasta’s traditional sauce is a drizzle of good extra virgin olive oil or melted butter with a few fresh sage leaves and a sprinkle of parmesan.
