These tortelli feature the porcini mushroom (Bolitus Edulus). The family ‘funghi find’ – or treasure map – is a tightly held secret in Northern Italy. This recipe traditionally uses a collection of wild mushrooms, the pride of which is the Porcini, which is found beneath deciduous and conifer forests.
The traditional sauce is a comforting and hearty Pasta Emilia Tomato Sauce that contrasts perfectly with the delicate mushroom filling.
For an innovative proposal serve with a rich creamy sauce and fine-cut prosciutto strips on top.
