Duck and Truffle Tortelli
Few ingredients elicit a gourmet, cult-like response as strong as the magnificent black truffle (tuber melanosporum). There is palpable excitement around the season in Sydney and as this approaches, our founder, Anna, heads to her favourite NSW family truffle farm - Terra Preta outside Braidwood.
A traditional sauce for our Duck & Truffle Tortelli is melted butter, lightly browned in the pan, flavoured with fresh sage poured directly in the dish with plenty of grated parmesan cheese.
For a special effect. serve this tortelli with Pasta Emilia Truffle Cream Sauce made of fresh cream and black shaved Italian truffle. Toss them in the pan with double cream, parmesan cheese and a dash of nutmeg.
