There is much talk about the best potato for making Gnocchi. Anna Maria chooses the nutty flavoured, yellowish fleshed Nicola (solanum tuberosum) variety grown to perfection by Greg at Block 11 organic farms.
We use a combination of rice and corn flours to keep this gnocchi gluten free.
A traditional sauce for gnocchi is tomato and basil. Use our delicious organic version or make from scratch and always serve with plenty of grated parmesan cheese.
For a special effect serve the gnocchi with Pasta Emilia’s Truffle Sauce made with fresh cream and black shaved Italian truffle.
