Our interpretation of this infamous Ligurian sauce includes a small Australian twist: we use macadamia rather than pine nuts. We also use a local parmesan cheese, parmigiano australianoiano.
This organic ‘grana’ texture cheese produced from Victorian biodynamic milk has a clean, sweet, lingering flavour that has become an integral part of our production. Cheese maker Steve Interlandia learnt how to make traditional parmesan from his father John who was plying his craft as far back as 1958.

Preparation Instructions: Toss with your favourite Pasta Emilia pasta shape. For an extra touch simply add anchovies, salty cheese or Pasta Emilia chilli oil on top.
