Please note that despite this being the ‘final truffle degustation’ depending on the duration of the Truffle season, it may be extended.

Duck liver pate with black truffle on a sourdough crostini

Cavolfiori al forno su fonduda di tartufo

Roasted cauliflower with black truffle fondue

Tartare di king fish con topinambur, olio di sesame e pure’ di tartufo nero

King fish tartare with Jerusalem artichokes puree, sesame seeds oil and and black truffle

Primi:

Cappellacci fatti a mano con ripieno di radicchio rosso e ricotta e burro tartufato a timo

Hand made cappellacci with radicchio and ricotta filling served with black truffle butter and thyme

Risotto mantecato al tartufo nero su letto di cicorie

Vialone nano risotto with black truffle and fresh chicory

Quaglie al Martini con pure di sedano rapa e tartufo nero

“Drunken” Martini roasted quail served with celeriac puree and black truffle

Torta di polenta pasticciata con besciamella ai formaggi, tartufo nero e verdure di stagione

Emilian polenta torte with mixed cheese fondue, black truffle and seasonal vegetables

Semifreddo al tartufo nero a cioccolato organico 70% e mele cotogne coulis

Truffle and 70% chocolate semifreddo and quince jam
