How often have travellers in Italy thrilled at the discovery of the tangy, pale butters served there only to return home to contemplate supermarket butter with regret?

Pasta Emilia is organising butter-making classes which will teach you how to make Continental-style butters so that you can have a constant supply of the butter you enjoyed on your European travels. You will also learn how to make different flavoured butters and how to use the buttermilk which is a healthful by-product of the butter-making process.

Former journalist and travel and food writer Sue Girdwood will impart her amazing dairy skills and class participants will leave knowing how to produce their own chemical-free, pure cultured butter at home, with a recipe booklet and suggestions for using buttermilk and with a wide sampling of flavoured butters.

The class will include a full lunch menu featuring traditional Italian bagna cauda, the amazing warm dipping sauce for breads and vegetables which is the perfect appetizer for any meal, followed by a degustation of pastas paired with different flavoured butters, and finishing with velvety buttermilk pannacotta and a rich cheesecake, all paired with a complementary glass of organic wine.

Former journalist Sue Girdwood worked for many years in Rome and Hong Kong and now spends most of her waking hours in the kitchen. Her great passion is honest food, cooked with love and attention. Her hope is that good, old-fashioned, basic skills can be imparted to enthusiastic home cooks and that the power of mass-producers of foodstuffs will slowly be eroded. First bread, then pasta, now butter!!
