Truffle Degustation Season


Don't miss the opportunity to enjoy some of the best Australian truffles in our Osteria and to visit Madame Truffles pop-up shop in our Cantina!

Madame Truffle is a specialist truffle retailer and will be here during the season, with a pop-up shop downstairs (Wed-Sun, 10.00am-5.00pm). For the past six years, the Madame has been selling a wide range of fresh quality Australian truffles (tuber melanosporum): in our Cantina you can now find truffle ice cream, truffle honey, truffle salt and, of course, amazing truffle pasta such as the potato&truffle ravioli.

Truffles are harvested fresh each week and the Madame takes great care in choosing them, as well as Anna and our chef select carefully the best Emilian recipes for you to discover this treasure.

We will have daily specials and a new degustation menu every Thursday in July*, bringing on your table different products, from the smoky truffles of Braidwood NSW to the pungent cheesy truffles of Manjimup WA.

MENU WEEK 1 - Thu 6th

Erbazzone con patate, funghi porcini e tartufo servito con insalatina di stagione
Fine pie of potatoes, porcini mushrooms and truffle served with a seasonal salad
Zuppetta di cavolfiore servita con crostini al burro tartufato
Cauliflower soup served with cruncy bread with truffle butter

Mezzelune ripiene di mozzarella, tapinambur e tartufo al burro e timo
Traditional moon-shaped ravioli filled with mozzarella jerusalem artichokes and truffle served with butter and tyhme
Gnocchi di castagne e patate al tartufo con burro e salvia
Chestnuts and potatoes gnocchi with truffle served with butter and sage

Cotechino piacentino con pure’ di sedano rapa e tartufo
Traditional Piacenza cooked salami with celeriac pure’ and truffle

Insalatina di sedano rapa, tartufo e petto d’anatra affumicato
Celeriac salad with shaved truffles and smoked duck breast
Polenta fritta, caprino e tartufo
Fried polenta, goat cheese and shaved truffle

Anolini parmigiano e tartufo in brodo d’anatra
Parmesan and truffle Anolini in duck broth
Risotto con topinambur, taleggio e tartufo
Jerusalem artichokes, taleggio cheese and truffle risotto

Sformato di stoccafisso e polenta al tartufo nero
Stockfish flan with black truffle polenta

Tortino di pere, cioccolato e amaretti con gelato al tartufo

MENU WEEK 3 - Thu 20

Patè d’anatra con gelatina di mela cotogna, tartufo fresco e pane alle noci
Duck liver patè with quince jelly, shaved fresh truffle and walnut bread
Frittata di uova, funghi, parmigiano ed erbette al tartufo
Mushrooms, Parmesan, eggs and herbs frittata with shaved fresh truffle

Cappellettoni di merluzzo, patate e tartufo con salsa di polenta e verza
Cappellettoni filled with cod, potatoes and truffle with polenta and cabbage cream sauce
Tagliolini di farro al burro, tartufo e tuorlo d’uovo
Spelt tagliolini with butter, egg yolk and fresh saved truffle

Confit d’anatra con patate farcite al tuorlo e fonduta al tartufo
Duck confit served with potato filled with egg yolk and truffle fondue

Bonet di cioccolato e amaretti con crema di caramello e fragole
