Alessandro spent the last fifteen years of his life learning and developing the Italian traditional techniques of pasta making within his family pasta laboratory in Reggio Emilia, the heart of fresh pasta tradition in Italy. He is one of the few still able to produce every single type of pasta just by hand, with simple traditional tools such as a wooden rolling pin and a board.
His passion for pasta making along with his unique technique was able to add an authentic Italian flavour to the beautiful existing Pasta Emilia range. He loves teaching the secrets of Italian traditional pasta making art during our pasta classes and also in the many local organic markets where Pasta Emilia is present.
