Truffle Degustation week 4


Pasta Emilia will celebrate Australian Truffles throughout the entire month of August. Anna Eoclidi, in collaboration with Madame Truffles from Melbourne, has created a culinary experience that will follow a trail round the best Australian Truffle farms. This gastronomic journey will start in Tasmania, go on through Victoria to WA and finish right here in the much loved Terra Petra truffiere in Braidwood NSW. 

Madame Truffles will source for the event some of the highest-quality truffles from Australia. The banquet-style truffle dinner will showcase an assortment of truffles in a wide variety of flavours. 

Menu week 4

Sformatino di patate su fonduta di formaggio al tartufo

Potatoes flan served on a cheese fondue with shaved truffle (VIC)

Focaccia al tartufo

Truffle focaccia (WA)

Gnocchi ripieni di toma e tartufo al burro e salvia

Gnocchi filled with toma cheese and truffle served with butter and sage (NSW)

Risotto d’orzo in crema di cavolfiore e tartufo

Barley risotto with cauliflower cream and shaved truffle (NSW)

Quaglie in pancetta su polenta bianca tartufata

Quails wrapped in pancetta served on a white polenta and truffle cream

Sformato di mele con gelato alla vaniglia e frutti di bosco

Apples flan with vanilla ice cream and blueberries

Set menu price: $ 75 (matching wines $ 25)
