Truffle Degustation week 3

Pasta Emilia will celebrate Australian Truffles throughout the entire month of August. Anna Eoclidi, in collaboration with Madame Truffles from Melbourne, has created a culinary experience that will follow a trail round the best Australian Truffle farms. This gastronomic journey will start in Tasmania, go on through Victoria to WA and finish right here in the much loved Terra Petra truffiere in Braidwood NSW. 

Madame Truffles will source for the event some of the highest-quality truffles from Australia. The banquet-style truffle dinner will showcase an assortment of truffles in a wide variety of flavours. 

Menu week 3

Carpaccio di manzo al tartufo fresco con insalatina di finocchi e rucola

Beef carpaccio with shaved truffle served with rocket and fennel salad (VIC)

Zuppetta di carote viola, patate ed erbette al tartufo

Purple carrots, potatoes and herbs soup with shaved truffle (WA)

Cappellettoni di merluzzo, patate e tartufo con salsa di polenta e verza

Cappellettoni filled with cod, potatoes and truffle with polenta and cabbage cream sauce (NSW)

Pappardelle di grano saraceno, patate viola e bietole al burro, maggiorana e tartufo

Buckwheat pappardelle, with midnight potatoes, silver beets, butter, marjoram and truffle (NSW)

Confit d’anatra con patate farcite al tuorlo e fonduta al tartufo

Duck confit served with potato filled with egg yolk and truffle fondue (TAS)

Bonet di cioccolato e amaretti con crema di caramello e fragole

Chocolate and amaretti pudding with caramel sauce and strawberries
