Truffle Degustation week 2


Pasta Emilia will celebrate Australian Truffles throughout the entire month of August. Anna Eoclidi, in collaboration with Madame Truffles from Melbourne, has created a culinary experience that will follow a trail round the best Australian Truffle farms. This gastronomic journey will start in Tasmania, go on through Victoria to WA and finish right here in the much loved Terra Petra truffiere in Braidwood NSW. 

Madame Truffles will source for the event some of the highest-quality truffles from Australia. The banquet-style truffle dinner will showcase an assortment of truffles in a wide variety of flavours.

Parmesan and truffle Anolini in duck broth (NSW)

Risotto con topinambur e tartufo

Jerusalem artichokes and truffle risotto (NSW)

Sformato di stoccafisso e polenta al tartufo nero

Stockfish flan with black truffle polenta (TAS)

Tortino di pere, cioccolato e amaretti con panna

Pear, chocolate and amaretti tart with cream
