Truffle Degustation week 1


 

Pasta Emilia will celebrate Australian Truffles throughout the entire month of August. Anna Eoclidi, in collaboration with Madame Truffles from Melbourne, has created a culinary experience that will follow a trail round the best Australian Truffle farms. This gastronomic journey will start in Tasmania, go on through Victoria to WA and finish right here in the much loved Terra Petra truffiere in Braidwood NSW. 

Madame Truffles will source for the event some of the highest-quality truffles from Australia. The banquet-style truffle dinner will showcase an assortment of truffles in a wide variety of flavours. 

Menu week 1

Erbazzone con patate, funghi porcini e tartufo servito con insalatina di stagione

Fine pie of potatoes, porcini mushrooms and truffle served with a seasonal salad (VIC)

 Zuppetta di cavolfiore e patate servita con pane croccante al burro tartufato

Cauliflower and potatoes soup served with cruncy bread with truffle butter (TAS)

Tortelli con la coda, porcini e tartufo al burro e timo

Traditional plaited ravioli filled with porcini mushrooms and truffle with butter and thyme (NSW)

Gnocchi di castagne e patate al tartufo con burro e salvia

Chestnuts and potatoes gnocchi with truffle served with butter and sage (NSW)

 Cotechino piacentino con pure’ di sedano rapa e tartufo

Traditional Piacenza cooked salami with celeriac pure’ and truffle (WA)

 Salame al cioccolato e canditi

Chocolate and candid sweet salami
